The Flagrant Seed is a fusion between Italian and Lebanese cuisine. The fennel content of this salami is higher than any salami we offer. Fennel is traditional herb used in many Italian recipes. The sumac helps to open up the pallet so that the fennel flavor has a bursting effect on the mouth. Sumac is a red berry traditionally used Arabic cuisine. The Flagrant Seed is ideal for home charcuterie boards. This flavor was created specifically for a close Lebanese family friend and business mentor.
The Flagrant Seed is named for its origin as a finocchiona salami. Finocchiona is said to have originated in the Renaissance or Late Middle Ages. Fennel was used as an alternative to pepper. We named the Flagrant Seed because it is notably fragrant and contains many seeds. The name is also a reference to a flagrant foul, which can be seen in American Football.
Pork, pork jowl and sea salt. Contains less than 2% of the following: wine (contains sulfites), dextrose, pepper, fennel, garlic, thyme, celery seed, sesame seed, and lactic acid starter culture. We alternate between natural beef and hog casings. All of our wine is California sourced from: Vendemia in Temecula, Fritz in Sonoma, and Barton in Paso Robles.
