The Juicy Scandal is an Italian style soppressata. The process starts with whole pepper corns, soaked in wine over night to help cut the tooth. The soaking imparts the flavor of the pepper and wine throughout the salami during mixing the next day. It’s a pâté spice blend, also known as the Quatre Épices. This four spice mix is composed of nutmeg, clove, cinnamon, and ginger. The goal of these spices is to enhance the flavor with an underlying depth which pulls out the complex hint of red chili flakes. Many chefs use red chili flakes to mask bad preparation technique. In contrast, we wish to highlight the top quality of our organic chili flakes from Mountain Rose Herbs.
Soppressata is the most popular type of salami. We found a sandroveci wine to add to this salami. Sandroveci has a good amount of grape and tannin, which speaks to an underlying vanilla tone, accenting the cinnamon. This salami pairs well with chiante wine.
