This salami is a ‘thuringer cervelot,’ which translates to ‘country cop,’ hence we call it the Naughty Constable. This is one of our two original recipes. At the time of the Naughty Constable’s conception, its creator was drinking a gin and tonic.
We recommend pairing the Naughty Constable with mixed drinks. This salami is ideal to serve to guests, as it is not very spicy. The Naughty Constable is very heavy on caraway seeds, a spice typically used in rye bread.
Pork, pork jowl and sea salt. Contains less than 2% of the following: wine (contains sulfites), dextrose, pepper, caraway, garlic, juniper berries, fennel, onion, thyme, grapefruit peels, celery seed, and lactic acid starter culture. We alternate between natural beef and hog casings. All of our wine is California sourced from: Vendemia in Temecula, Fritz in Sonoma, and Barton in Paso Robles.
