The Ooh Mama Spicy is extra heavy on the cayenne with a black pepper punch, which hits in seven seconds. We take whole fennel seeds and allspice and put them through a spice grinder. This salami is great for your traditional flatbread and pizza. The Ooh Mama Spicy is typically paired with a heavy cabernet sauvignon, but feel free to experiment with other wines.

We alternate between natural beef and hog casings. All of our wine is California sourced from: Vendemia in Temecula, Fritz in Sonoma, and Barton in Paso Robles.
