The taste of this salami is black truffle that we slice the day before mixing. Next we macerate the truffle in wine. We take cocoa beans put them through a spice grinder. The chocolatey essence accentuates the truffle flavor. The Truffle Shuffle is not always available for purchase.
Albert’s wife named this salami in reference to a scene in ‘The Goonies’, which is a classic film from 1985.
Pork, pork jowl and sea salt. Contains less than 2% of the following: wine (contains sulfites), dextrose, pepper, truffle, garlic, onion, cocoa, celery seed, and lactic acid starter culture. We alternate between natural beef and hog casings. All of our wine is California sourced from: Vendemia in Temecula, Fritz in Sonoma, and Barton in Paso Robles.
